Joel Salatin is the star of this chapter

Joel is the reason why this chapter is important for this book. He is also the farmer responsible for the success for poly face farms. "Grass farming" is what he has perfected and now he teaches it.

Grass farming is basically what industrial farmers cant seem to do right because of hard work and the determination but really its a cycle that involves cows eating the grass then the chickens picking up for the cows then helping the grass and then cows eat grass again.

I don't want to get too much into the grass farming in this post as much as i will in a later one. But Joel Salatin has helped the farming community survive with his ideas and have given hope to organic food. 

He has written a few books which are prizes in the farming community and is possibly one of the most famous farmers actually. and it all started when Michael Pollan wanted Joel to send him a steak by mail and Joel refused because he feels his food should be kept inside the community.

Joel has been going college to college teaching about his art and skill and has won awards for his outstanding system.

UPDATE- Joel's farm which is named "Polyface Farms" is located in Virgina  and is a 500 acre (2.0 km2) size farm.
